- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup green beans, chopped
- 1 cup corn, frozen or fresh
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add the garlic and cook for an additional minute.
- Pour in the vegetable broth and diced tomatoes. Stir well.
- Add the green beans, corn, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Taste and adjust seasoning if needed.
- Serve warm and enjoy.
Notes
- You can substitute any vegetables you have on hand.
- For a heartier soup, add cooked beans or lentils.
