- 1 cup dried split peas
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 6 cups vegetable or chicken broth
- Salt and pepper to taste
- Optional: 1 cup diced ham or bacon for added flavor
Instructions
- Rinse the split peas under cold water.
- In a large pot, sauté the onion, carrots, and celery until soft.
- Add the garlic and cook for 1 more minute.
- Stir in the split peas, thyme, bay leaf, and broth.
- Bring to a boil, then reduce heat and simmer for 1 hour until peas are soft.
- Remove the bay leaf and blend the soup for a smoother texture, if desired.
- Add salt and pepper to taste.
Notes
- Substitute vegetable broth for a vegetarian option.
- Use parsnips instead of carrots for a different flavor.
- For a creamier soup, add a splash of cream or coconut milk before serving.
