- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 package cornbread mix
- 1 cup shredded cheese
- 1/2 cup milk
- 1 egg
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium heat.
- Drain excess fat from the beef.
- Add black beans, corn, and salsa to the skillet. Stir to combine.
- In a separate bowl, mix cornbread mix, milk, and egg until smooth.
- Spread the beef mixture evenly in a baking dish.
- Pour the cornbread batter on top of the beef mixture.
- Sprinkle cheese on top of the cornbread batter.
- Bake for 25-30 minutes or until the cornbread is golden brown.
- Let it cool slightly before serving.

- For a vegetarian option, replace ground beef with cooked quinoa or additional beans.
- Use low-sodium beans and salsa for a healthier dish.
