Ingredients

  • 1 cup fresh cranberries, chopped
  • 1/2 cup sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine flours, sugar, baking powder, and salt.
  3. In another bowl, mix orange juice, oil, egg, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir gently.
  5. Add chopped cranberries and mix until just combined.
  6. Fill muffin cups about 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before removing from the pan.
