- 1 cup whole wheat flour
- 1 cup fresh cranberries, chopped
- 1/2 cup sugar
- 1/2 cup orange juice
- 1/4 cup vegetable oil

- 1 tablespoon baking powder

- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine flours, sugar, baking powder, and salt.
- In another bowl, mix orange juice, oil, egg, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir gently.
- Add chopped cranberries and mix until just combined.
- Fill muffin cups about 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before removing from the pan.
Notes
- You can substitute whole wheat flour with almond flour for a gluten-free option.
- Use unsweetened applesauce instead of oil for a lower fat version.
- Fresh cranberries can be replaced with dried cranberries if preferred.
