- 1 pound chicken breast, diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8 oz) cream cheese
- 1 cup chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, combine the diced chicken, black beans, corn, diced tomatoes, and chicken broth.
- Add chili powder, cumin, garlic powder, salt, and pepper.
- Bring the mixture to a boil over medium heat.
- Reduce heat and let it simmer for 15 minutes, stirring occasionally.
- Add the cream cheese to the pot and stir until melted and well combined.
- Cook for an additional 5 minutes, then serve warm.
Notes
- For a spicier chili, add jalapeños or extra chili powder.
- Substitute chicken breast with turkey or tofu for different protein options.
- Use light cream cheese for a lower-fat version.
