- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 2 tablespoons olive oil

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Sauté until softened.
- Add chopped cauliflower and vegetable broth. Bring to a boil.
- Reduce heat and simmer until cauliflower is tender, about 15 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in heavy cream or coconut milk. Season with salt and pepper.
- Garnish with chopped chives before serving.
