- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 2 cups fresh spinach, chopped
- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a skillet, sauté onion and garlic until softened.
- Add mushrooms and cook until tender.
- Stir in spinach and cook until wilted.
- In a bowl, mix ricotta, half of the mozzarella, parmesan, basil, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer three lasagna noodles over the sauce.
- Add half of the ricotta mixture, half of the mushroom-spinach mixture, and more marinara sauce.
- Repeat layers, finishing with noodles, sauce, and remaining mozzarella on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
Notes
- For a vegetarian option, use vegetable-based marinara sauce.
- Substitute gluten-free noodles if needed.
- Use cottage cheese instead of ricotta for a lighter option.
