A comforting creamy spinach mushroom lasagna that warms the heart.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a skillet, sauté onion and garlic until softened.
  4. Add mushrooms and cook until tender.
  5. Stir in spinach and cook until wilted.
  6. In a bowl, mix ricotta, half of the mozzarella, parmesan, basil, salt, and pepper.
  7. Spread a layer of marinara sauce on the bottom of a baking dish.
  8. Layer three lasagna noodles over the sauce.
  9. Add half of the ricotta mixture, half of the mushroom-spinach mixture, and more marinara sauce.
  10. Repeat layers, finishing with noodles, sauce, and remaining mozzarella on top.
  11. Cover with foil and bake for 25 minutes.
  12. Remove foil and bake for an additional 15 minutes until cheese is bubbly.

Notes

  • For a vegetarian option, use vegetable-based marinara sauce.
  • Substitute gluten-free noodles if needed.
  • Use cottage cheese instead of ricotta for a lighter option.
