Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Brown the beef cubes in batches, then transfer to the crock pot.
- Add carrots, potatoes, onion, and garlic to the pot.
- Pour in beef broth and Worcestershire sauce.
- Sprinkle thyme, salt, and pepper over the top.
- Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve warm and enjoy.
Notes
- For a gluten-free version, use gluten-free Worcestershire sauce.
- Substitute vegetables like parsnips or sweet potatoes if desired.
- Leftovers store well in the fridge for up to 3 days.
