- 2 lbs potatoes, diced
- 1 lb beef, thinly sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cups shredded cheese
- 1 can cream of mushroom soup
- 1 cup beef broth
- Salt and pepper to taste
Instructions
- Place diced potatoes in the bottom of the crockpot.
- Layer the sliced beef, onion, and bell pepper on top of the potatoes.
- In a bowl, mix the cream of mushroom soup and beef broth. Pour this mixture over the layers in the crockpot.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, sprinkle cheese over the top and cover until melted.

- You can use chicken or turkey for a lighter option.
- Swap out the cream of mushroom soup for a dairy-free alternative if needed.
