A hearty and comforting crockpot cheesesteak potato casserole that is easy to make and perfect for family meals.


Ingredients

  • 2 lbs potatoes, diced
  • 1 lb beef, thinly sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups shredded cheese
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Place diced potatoes in the bottom of the crockpot.
  2. Layer the sliced beef, onion, and bell pepper on top of the potatoes.
  3. In a bowl, mix the cream of mushroom soup and beef broth. Pour this mixture over the layers in the crockpot.
  4. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. In the last 30 minutes, sprinkle cheese over the top and cover until melted.
