Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the chicken breasts for about 5 minutes on each side.
- Place the chicken in the crockpot.
- Add rice, chicken broth, mixed vegetables, onion, garlic, salt, pepper, and paprika.
- Stir gently to combine all ingredients.
- Cover and cook on low for 6-8 hours or until chicken is cooked through and rice is tender.
- Shred chicken with two forks before serving.
- Serve warm.
