- 2 pounds chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix honey, soy sauce, ketchup, garlic, and ginger.
- Pour the mixture over the chicken in the crockpot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, remove chicken and set aside.
- Mix cornstarch and water in a small bowl to make a slurry.
- Add the slurry to the sauce in the crockpot and stir well.
- Return chicken to the crockpot, cover, and cook on high for an additional 30 minutes.
- Serve warm over rice or vegetables.

- Try using chicken breasts instead of thighs if you prefer leaner meat.
