Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the chopped onion and minced garlic.
  2. Drain excess fat and add the mixture to the crockpot.
  3. Add crushed tomatoes, beef broth, Italian seasoning, salt, and pepper to the crockpot.
  4. Cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles.
  6. Once noodles are cooked, ladle soup into bowls.
  7. Top each bowl with ricotta and mozzarella cheese.
