A comforting and hearty crockpot lasagna soup that brings the flavors of traditional lasagna to a warm bowl of soup.

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with the chopped onion and minced garlic.
- Drain excess fat and add the mixture to the crockpot.
- Add crushed tomatoes, beef broth, Italian seasoning, salt, and pepper to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- About 30 minutes before serving, stir in the broken lasagna noodles.
- Once noodles are cooked, ladle soup into bowls.
- Top each bowl with ricotta and mozzarella cheese.
