- 1 pound of chicken thighs
- 2 cups of mixed vegetables (carrots, peas, corn)
- 1 can of diced tomatoes
- 1 cup of chicken broth

Instructions
- Place the chicken thighs in the bottom of the crockpot.
- Add the mixed vegetables on top of the chicken.
- Pour the diced tomatoes and chicken broth over the vegetables.
- Sprinkle garlic powder, onion powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve warm and enjoy your meal.
