A comforting and easy crockpot sweet potato casserole.
Ingredients

- 4 large sweet potatoes, peeled and diced
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup mini marshmallows (optional)
Instructions
- Prepare your crockpot by greasing the bottom with a little butter.
- Place the diced sweet potatoes in the crockpot.
- In a bowl, mix brown sugar, melted butter, milk, eggs, vanilla, cinnamon, and nutmeg.
- Pour the mixture over the sweet potatoes.
- Cover and cook on low for 6-8 hours or until sweet potatoes are tender.
- If using, sprinkle mini marshmallows on top and cook for an additional 30 minutes on high until marshmallows are melted.
Notes
- For a vegan option, replace butter with coconut oil and eggs with flaxseed meal.
- You can use almond milk or oat milk for a dairy-free version.
- Adjust the sweetness by reducing brown sugar if preferred.
