Ingredients

- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup beef or chicken broth
- 1 cup bell pepper, chopped
- 1 medium onion, chopped
- 1 cup shredded cheese (optional)
- 1 avocado, diced (optional)
Instructions
- In a skillet, brown the ground meat over medium heat. Drain any excess fat.
- Add the browned meat to the crockpot.
- Stir in the black beans, corn, diced tomatoes, taco seasoning, broth, bell pepper, and onion.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir and taste. Adjust seasoning if needed.
- Top with cheese and avocado if desired.
Notes
- You can substitute ground meat with lentils for a vegetarian option.
- Feel free to add more vegetables like zucchini or carrots.
- For a spicier soup, add jalapeños or hot sauce.
