- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chiles
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- Place the chicken breasts in the crockpot.
- Add the white beans, corn, green chiles, onion, garlic, cumin, chili powder, and chicken broth.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks.
- Stir in the sour cream and cheese if using.
- Serve warm and enjoy.

- You can use ground chicken or turkey instead of chicken breasts.
