Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 4 large tortillas
  • 1 avocado, sliced
  • 1 cup lettuce, shredded

Instructions

  1. In a bowl, mix the shredded chicken, black beans, corn, cheese, and salsa.
  2. Lay a tortilla flat on a surface.
  3. Spoon a portion of the chicken mixture onto the center of the tortilla.
  4. Add slices of avocado and some shredded lettuce on top.
  5. Fold the sides of the tortilla in, then roll it up from the bottom to the top.
  6. Repeat with the remaining tortillas and filling.
  7. Slice each wrap in half and serve immediately.
