- 1 cup applesauce
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the applesauce, sugar, and vegetable oil.
- Add the eggs and vanilla extract. Stir until well combined.
- In another bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- If using, fold in the chopped nuts.
- Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before removing them from the tin.
Notes
- You can substitute applesauce with mashed bananas for a different flavor.
- Use whole wheat flour for a healthier option.
- Feel free to add dried fruits or chocolate chips for extra sweetness.
