- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup green beans, trimmed and cut
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery. Cook for 5 minutes, stirring occasionally.
- Add the minced garlic and cook for another minute.
- Pour in the vegetable broth and diced tomatoes.
- Add the green beans and thyme. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Taste and adjust seasoning if needed.
- Serve warm and enjoy.
Notes
- You can substitute olive oil with any vegetable oil.
- Feel free to add any vegetables you like.
- For a heartier soup, add cooked beans or lentils.
