Ingredients

- 2 cups of rice
- 4 cups of water or broth
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- Salt and pepper to taste
- Optional: cooked chicken or tofu for added protein
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until onions are translucent.
- Add mixed vegetables and cook for another 3-4 minutes.
- Add the rinsed rice to the pot, stirring to combine.
- Pour in water or broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked and liquid is absorbed.
- Fluff rice with a fork and season with salt and pepper. Add cooked chicken or tofu if desired.
Notes
- You can substitute brown rice for white rice for more fiber.
- Try using vegetable broth for a vegetarian option.
- Feel free to use frozen vegetables for convenience.
