Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until onions are translucent.
  3. Add mixed vegetables and cook for another 3-4 minutes.
  4. Add the rinsed rice to the pot, stirring to combine.
  5. Pour in water or broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked and liquid is absorbed.
  7. Fluff rice with a fork and season with salt and pepper. Add cooked chicken or tofu if desired.
