			- 1 cup vegetable broth
 - 1/2 cup diced carrots
 - 1/2 cup diced potatoes
 - 1/2 cup chopped celery
 - 1/2 cup chopped onions
 - 1 cup canned diced tomatoes
 - 1 teaspoon dried thyme
 - Salt and pepper to taste
 - 1 tablespoon olive oil
 
Instructions
- Heat olive oil in a pot over medium heat.
 - Add onions, carrots, and celery. Cook until soft, about 5 minutes.
 - Add potatoes and cook for another 5 minutes.
 - Pour in the vegetable broth and canned tomatoes.
 - Add thyme, salt, and pepper.
 - Bring to a boil, then reduce heat and simmer for 20 minutes.
 - Serve warm.
