- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef, season with salt and pepper, and brown on all sides.
- Remove beef and set aside.
- Add onions and garlic to the pot, cooking until softened.
- Return beef to the pot and add beef broth, carrots, potatoes, thyme, and bay leaf.
- Bring to a simmer, then cover and reduce heat to low.
- Cook for 1.5 to 2 hours, until beef is tender.
- Remove bay leaf before serving.
