- 1 whole chicken (about 4–5 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 lemon, halved
- Fresh herbs (like rosemary or thyme), optional
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken and pat it dry with paper towels.
- Rub the olive oil all over the chicken.
- Season the chicken with salt, pepper, garlic powder, and onion powder.
- Place lemon halves and herbs inside the cavity of the chicken.
- Place the chicken in a roasting pan.
- Roast in the oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
Notes
- Substitute olive oil with melted butter for a richer flavor.
- Use chicken thighs or breasts if you prefer smaller portions.
- Store leftovers in the fridge for up to 3 days.
