Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, bring water or broth to a boil.
- Add the rinsed rice to the boiling liquid.
- Stir in the mixed vegetables and optional protein.
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork.

- You can substitute rice with quinoa or couscous.
- Use any vegetables you have on hand.
- For a richer flavor, sauté vegetables in olive oil before adding them to rice.
