- 4 cups vegetable broth

- 2 carrots, diced
- 2 celery stalks, diced

- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
- Add white beans, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use a blender to puree part of the soup for a creamier texture, if desired.
- Serve warm, with crusty bread if you like.
