- 2 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 can diced tomatoes (14.5 oz)

- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Sauté until soft.
- Add ground turkey. Cook until browned.
- Stir in carrots and potatoes. Cook for 5 minutes.
- Add diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil. Reduce heat to low. Cover and simmer for 30 minutes.
- Check for tenderness of vegetables. Adjust seasoning if needed.
- Serve warm and enjoy your meal.

- Feel free to substitute ground beef or chicken for turkey.
