Easy and comforting freezer meals for two that can be prepared in advance.
Ingredients

- 2 boneless chicken breasts
- 1 cup broccoli florets
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 can cream of chicken soup
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the cream of chicken soup, garlic powder, salt, and pepper.
- Layer the cooked rice at the bottom of a baking dish.
- Place the chicken breasts on top of the rice.
- Add the broccoli florets over the chicken.
- Pour the soup mixture over everything.
- Sprinkle shredded cheese on top.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
- Let it cool and portion into containers for freezing.
Notes
- Substitute chicken with tofu for a vegetarian option.
- Use any frozen vegetables you have on hand.
- Cooked quinoa can replace rice for a healthier grain option.
