- 4 chicken thighs
- 2 cups mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat.
- Brown the chicken thighs on both sides, about 5 minutes each side.
- Remove chicken and set aside.
- Add onion, garlic, and mushrooms to the skillet. Sauté until softened.
- Stir in chicken broth, thyme, salt, and pepper.
- Add heavy cream and bring to a simmer.
- Return the chicken to the skillet, spooning sauce over it.
- Transfer everything to a baking dish.
- Bake for 30-35 minutes until chicken is cooked through.

- Use skinless chicken for a lighter dish.
- Substitute low-fat cream for a healthier option.
- Feel free to add your favorite vegetables.
