Ingredients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, chopped
- 1 carrot, shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash all vegetables thoroughly.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, carrot, and red onion.
- If using, add feta cheese to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes for a colder salad.
Notes
- Feel free to substitute your favorite vegetables.
- Use lemon juice instead of balsamic vinegar for a different flavor.
- For a vegan option, omit the cheese.
