Ingredients

Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the rice, water, olive oil, and salt.
- Bring to a boil over medium heat.
- Reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed.
- Stir in mixed vegetables and optional protein, if using.
- Cover and let sit for 5 minutes before serving.
