Ingredients

- 1 teaspoon baking soda
- 1 tablespoon ground ginger

- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup molasses
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, baking soda, spices, and salt.
- In another bowl, cream the butter and brown sugar until smooth.
- Add the molasses, egg, and vanilla to the butter mixture. Mix well.
- Gradually add the dry ingredients to the wet ingredients. Mix until combined.
- Drop tablespoon-sized balls of dough onto a baking sheet.
- Bake for 8-10 minutes until the edges are firm.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For a gluten-free option, replace all-purpose flour with a gluten-free flour blend.
- You can substitute honey for molasses for a different flavor.
- Use vegan butter and a flax egg for a vegan version.
