- 2 ripe bananas
- 1 cup gluten-free oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Add the almond butter, honey or maple syrup, and vanilla extract to the bananas and mix well.
- Stir in the gluten-free oats, cinnamon, and salt.
- If using, fold in the chocolate chips.
- Drop spoonfuls of the mixture onto a lined baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool before enjoying.
Notes
- You can substitute almond butter with peanut butter or sunflower seed butter.
- Maple syrup can replace honey for a vegan option.
- Store cookies in an airtight container for up to a week.
