- 2 cups of mixed vegetables (carrots, peas, corn)
- 1 cup of rice
- 2 cups of chicken broth

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken breast and cook until golden brown on both sides.
- Remove chicken, and in the same pot, add mixed vegetables.
- Sauté vegetables for about 5 minutes.
- Add rice and stir for another minute.
- Pour in chicken broth and bring to a boil.
- Return chicken to the pot, cover, and reduce heat to low.
- Cook for 20 minutes or until rice is tender and chicken is cooked through.
- Season with salt and pepper to taste before serving.
