Ingredients

- 1 pound ground beef
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) enchilada sauce
- 2 cups shredded cheddar cheese
- 8 corn tortillas, cut into strips
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain the fat.
- Add black beans, enchilada sauce, garlic powder, cumin, salt, and pepper. Stir until mixed.
- In a baking dish, layer half of the tortilla strips on the bottom.
- Spread half of the beef mixture over the tortillas.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- You can use ground turkey or chicken as a substitute for beef.
- For a vegetarian option, replace the beef with more beans or vegetables.
- Use low-fat cheese for a lighter version.
