A hearty and comforting ground beef enchilada casserole that is easy to prepare.


Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) enchilada sauce
  • 2 cups shredded cheddar cheese
  • 8 corn tortillas, cut into strips
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain the fat.
  3. Add black beans, enchilada sauce, garlic powder, cumin, salt, and pepper. Stir until mixed.
  4. In a baking dish, layer half of the tortilla strips on the bottom.
  5. Spread half of the beef mixture over the tortillas.
  6. Sprinkle half of the cheese on top.
  7. Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  8. Bake for 25-30 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

  • You can use ground turkey or chicken as a substitute for beef.
  • For a vegetarian option, replace the beef with more beans or vegetables.
