Ingredients

  • 2 pounds of chicken breast
  • 1 cup of diced carrots
  • 1 cup of diced potatoes
  • 1 cup of chopped celery
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of low-sodium chicken broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the diced carrots, potatoes, celery, onion, and garlic on top of the chicken.
  3. Pour in the chicken broth.
  4. Sprinkle thyme, rosemary, salt, and pepper over the mixture.
  5. Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours.
  6. Once cooked, shred the chicken with two forks and stir everything together.
  7. Serve warm and enjoy your meal.
