Ingredients

- 2 pounds of chicken breast
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 cup of chopped celery
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of low-sodium chicken broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the diced carrots, potatoes, celery, onion, and garlic on top of the chicken.
- Pour in the chicken broth.
- Sprinkle thyme, rosemary, salt, and pepper over the mixture.
- Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours.
- Once cooked, shred the chicken with two forks and stir everything together.
- Serve warm and enjoy your meal.
Notes
- You can use turkey or beef instead of chicken.
- For a vegetarian option, replace chicken with tofu or beans.
