Ingredients

  • 1 cup of black beans, canned and rinsed
  • 1 cup of corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, combine rice with 4 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for 40-45 minutes until rice is tender.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onions, bell pepper, and garlic. Sauté until vegetables are soft.
  5. Stir in black beans, corn, cumin, salt, and pepper. Cook for another 5-7 minutes.
  6. Once the rice is cooked, fluff it with a fork and mix it with the vegetable and bean mixture.
  7. Serve warm and garnish with fresh cilantro.

Notes

  • You can substitute brown rice with quinoa for a gluten-free option.
  • Use any color bell pepper you prefer.
