Healthy meatloaf muffins that are easy to prepare and perfect for a comforting meal.
Ingredients

			- 1 pound ground turkey or chicken
 - 1 cup oats
 - 1/2 cup finely chopped onion
 - 1/2 cup grated carrot
 - 2 cloves garlic, minced
 - 1/4 cup ketchup
 - 2 large eggs
 - 1 teaspoon salt
 - 1/2 teaspoon pepper
 - 1 teaspoon dried thyme
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large bowl, combine all ingredients.
 - Mix well until everything is evenly blended.
 - Grease a muffin tin or use muffin liners.
 - Scoop the mixture into the muffin tin, filling each cup about 2/3 full.
 - Bake for 25-30 minutes or until cooked through.
 - Let them cool for a few minutes before removing from the tin.
 
Notes
- You can substitute ground beef or pork if preferred.
 - Use gluten-free oats for a gluten-free option.
 - Add chopped bell peppers or zucchini for extra veggies.
