Ingredients

  • 2 cups spinach
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, zucchini, and bell pepper. Cook for 5 minutes.
  4. Add vegetable broth, diced tomatoes, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in spinach and cook until wilted.
  7. Serve warm and enjoy.
