Ingredients

  • 1 cup of broccoli florets

  • 1 bell pepper, chopped
  • 2 cups of vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme

Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  4. Add the broccoli, carrots, and bell pepper. Cook for 5 minutes.
  5. Add the rinsed rice, vegetable broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 40 minutes or until rice is tender.
  7. Fluff the rice with a fork and serve warm.
