Ingredients

  • 2 cups of rice
  • 1 can of black beans, drained
  • 1 cup of corn
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt to taste
  • 2 tablespoons of olive oil
  • 1 bell pepper, diced
  • 1 onion, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and diced bell pepper. Cook until softened.
  3. Stir in the rice, black beans, corn, cumin, chili powder, and salt.
  4. Add 4 cups of water and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  6. Fluff with a fork and serve warm.

Notes

  • You can substitute brown rice for white rice for added fiber.
