Ingredients

- 2 cups of rice
- 1 can of black beans, drained
- 1 cup of corn
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt to taste
- 2 tablespoons of olive oil
- 1 bell pepper, diced
- 1 onion, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and diced bell pepper. Cook until softened.
- Stir in the rice, black beans, corn, cumin, chili powder, and salt.
- Add 4 cups of water and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
- Fluff with a fork and serve warm.
Notes
- You can substitute brown rice for white rice for added fiber.
- Try using kidney beans or lentils as an alternative to black beans.
- Add chopped tomatoes for extra flavor and nutrition.
