Ingredients

- 2 medium potatoes, diced

- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups vegetable broth

- 1 teaspoon thyme

- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add lentils, potatoes, broth, garlic powder, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Check if lentils and potatoes are tender.
- Serve warm and enjoy.

- Substitute sweet potatoes for regular potatoes for a sweeter taste.
- Use chicken broth instead of vegetable broth if preferred.
