A delicious and nutritious high fiber Asian stir-fry that you can easily prepare at home.
Ingredients

- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1 cup snap peas
- 1 bell pepper, sliced
- 1 carrot, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame seeds
Instructions
- Rinse the brown rice under cold water.
- In a pot, bring 2 cups of water to a boil.
- Add the rice, reduce heat, and cover. Cook for 45 minutes or until water is absorbed.
- In a large pan, heat olive oil over medium heat.
- Add broccoli, snap peas, bell pepper, and carrot. Stir-fry for 5-7 minutes.
- Add minced garlic and stir for 1 minute.
- Pour soy sauce over the vegetables and mix well.
- Serve the stir-fry over the cooked brown rice.
- Sprinkle sesame seeds on top before serving.
Notes
- Feel free to substitute any vegetables you like.
- Use low-sodium soy sauce for a healthier option.
- Cook the rice ahead of time for quicker preparation.
