Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 bell pepper, sliced
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, bring 2 cups of water to a boil.
  3. Add the rice, reduce heat, and cover. Cook for 45 minutes or until water is absorbed.
  4. In a large pan, heat olive oil over medium heat.
  5. Add broccoli, snap peas, bell pepper, and carrot. Stir-fry for 5-7 minutes.
  6. Add minced garlic and stir for 1 minute.
  7. Pour soy sauce over the vegetables and mix well.
  8. Serve the stir-fry over the cooked brown rice.
  9. Sprinkle sesame seeds on top before serving.

Notes

  • Feel free to substitute any vegetables you like.
  • Use low-sodium soy sauce for a healthier option.
