Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in chopped vegetables, cook for 5 minutes.
- Add cooked beans and vegetable broth, bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Blend the soup until smooth.
- Season with salt, pepper, and herbs.
