Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for another minute.
- Pour in broth and add tomatoes, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add mixed vegetables and pasta or rice, if using. Cook until tender.
- Season with salt and pepper to taste. Remove bay leaf before serving.
