- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/2 cup chopped green onions
- Salt to taste
- Pepper to taste
Instructions
- In a large skillet, heat the sesame oil over medium heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes.
- Push the vegetables to one side of the skillet.
- Crack the eggs into the skillet and scramble them until fully cooked.
- Add the cooked rice to the skillet and mix everything together.
- Pour the soy sauce over the rice and stir until well combined.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
- You can use leftover rice for better texture.
- Substitute vegetables based on your preference.
- For a vegetarian option, omit eggs or use tofu.
