Description

A comforting and easy-to-make Instant Pot lasagna soup that combines all the flavors of traditional lasagna in a warm, hearty bowl.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 8 oz uncooked pasta (such as rotini or penne)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode. Add ground beef, onion, and garlic. Cook until beef is browned.
  2. Add crushed tomatoes, chicken broth, uncooked pasta, Italian seasoning, salt, and pepper. Stir well.
  3. Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
  4. Once cooking is complete, carefully release the pressure.
  5. Stir in ricotta cheese and half of the mozzarella cheese until well combined.
  6. Serve hot, topping each bowl with remaining mozzarella cheese.
