A comforting and easy-to-make Instant Pot lasagna soup that combines all the flavors of traditional lasagna in a warm, hearty bowl.

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 8 oz uncooked pasta (such as rotini or penne)
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 tablespoon dried Italian seasoning
- Salt and pepper to taste
Instructions
- Set the Instant Pot to sauté mode. Add ground beef, onion, and garlic. Cook until beef is browned.
- Add crushed tomatoes, chicken broth, uncooked pasta, Italian seasoning, salt, and pepper. Stir well.
- Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
- Once cooking is complete, carefully release the pressure.
- Stir in ricotta cheese and half of the mozzarella cheese until well combined.
- Serve hot, topping each bowl with remaining mozzarella cheese.

- You can substitute ground turkey for a leaner option.
- Use gluten-free pasta for a gluten-free version.
