Ingredients

  • 2 pounds baby potatoes
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Wash the baby potatoes and cut them in half if they are large.
  2. In the instant pot, combine the chicken broth and ranch seasoning mix.
  3. Add the potatoes and olive oil to the pot.
  4. Season with salt and pepper.
  5. Close the lid and set the valve to sealing.
  6. Cook on high pressure for 10 minutes.
  7. Allow natural release for 5 minutes, then quick release the remaining pressure.
  8. Open the lid and gently stir the potatoes.
  9. Garnish with chopped parsley before serving.
