- 2 pounds baby potatoes
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Wash the baby potatoes and cut them in half if they are large.
- In the instant pot, combine the chicken broth and ranch seasoning mix.
- Add the potatoes and olive oil to the pot.
- Season with salt and pepper.
- Close the lid and set the valve to sealing.
- Cook on high pressure for 10 minutes.
- Allow natural release for 5 minutes, then quick release the remaining pressure.
- Open the lid and gently stir the potatoes.
- Garnish with chopped parsley before serving.

- You can substitute vegetable broth for a vegetarian option.
- Use any seasoning mix you prefer if ranch is not available.
