Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in milk and vanilla extract.
  5. In a separate bowl, mix flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Line a muffin tin with cupcake liners.
  8. Pour the batter into the liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool before icing.
  11. For the icing, mix powdered sugar and lemon juice until smooth. Spread over cooled cupcakes.
