Ingredients

- 2 pounds Italian sausage
- 3 bell peppers (red, green, yellow), sliced
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Hoagie rolls for serving (optional)
Instructions
- Brown the Italian sausage in a skillet over medium heat. Drain excess fat.
- Place the sliced peppers, onion, and garlic in the crockpot.
- Add the browned sausage on top of the vegetables.
- Pour in the diced tomatoes and add Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir gently before serving.
- Serve in hoagie rolls if desired.

- Use turkey or chicken sausage for a leaner option.
- Substitute any vegetables you prefer, like zucchini or mushrooms.
- Serve with a side salad for a complete meal.
