Ingredients

  • 4 cups dashi broth
  • 1 cup tofu, cubed
  • 1 cup sliced mushrooms
  • 1 cup chopped green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 cup spinach

Instructions

  1. In a pot, heat the dashi broth over medium heat.
  2. Add the mushrooms and cook for 5 minutes.
  3. Stir in the soy sauce and miso paste until dissolved.
  4. Add the tofu and simmer for another 5 minutes.
  5. Mix in the spinach and green onions just before serving.

Notes

  • You can use vegetable broth for a vegetarian version.
  • Substitute spinach with bok choy or kale if preferred.
  • Add extra vegetables like carrots or zucchini for more nutrition.
