- 4 cups dashi broth
- 1 cup tofu, cubed
- 1 cup sliced mushrooms
- 1 cup chopped green onions
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 cup spinach
Instructions
- In a pot, heat the dashi broth over medium heat.
- Add the mushrooms and cook for 5 minutes.
- Stir in the soy sauce and miso paste until dissolved.
- Add the tofu and simmer for another 5 minutes.
- Mix in the spinach and green onions just before serving.
Notes
- You can use vegetable broth for a vegetarian version.
- Substitute spinach with bok choy or kale if preferred.
- Add extra vegetables like carrots or zucchini for more nutrition.
